Ah, yes, it was canaries. Show how long it's been since I read that book. Hmm, not sure what doves would mean then (or if those things are canaries… though they don't look like em).

*spoiler warning for those who didn't read the book*

Joshi is right. In HBP, Hermione is jealous of Ron dating Lavender Brown, and at one point, she attacks him using the "Oppugno" spell. She conjures some birds and commands them to attack Ron. I'm just not sure if they set it near a spiral staircase in the film. In the book, it happened in an empty classroom. This scene appeared in the latest trailer, though, so someone can probably check it out to see if that's the scene that's in the poster. :)

It's definitely the room of requirement behind Draco, Hermione's is the only real mystery. Joshi's is probably the best guess so far, but wow are they stretching it!

Hermione attacks Ron with some conjured doves at one point… otherwise I can't fathom the meaning behind the rest of the background.

As for Draco, you can also see the cabinet behind him… or so I think, could be wrong.
